Why do we say “When pigs fly”?

Never; it just isn’t going to happen.

The story

A pig taking wing has been the picture of the impossible for centuries. A 1616 dictionary for young learners listed “Pigs fly in the ayre with their tayles forward.” Lewis Carroll’s Duchess told Alice she had as much right to think “as pigs have to fly.” And in 1909, a British aviator took a piglet up in his plane, just to prove the joke wrong.
