Why do we say “Easy as pie”?

Very easy, no trouble at all.

The story

The easy part is eating a pie, not baking one. Nineteenth-century Americans used “pie” for anything pleasant: “nice as pie” shows up in 1855, and an 1886 baseball paper said stealing bases was “like eating pie.” The full “easy as pie” is in print by 1887, in a comic story in a Rhode Island newspaper.
