Why do we say “Cut the mustard”?

To be good enough; to meet the standard.

The story

In 1800s America, “mustard” was slang for zest, the real thing; “the proper mustard” meant genuine. “Cut” meant to show off, as in cutting a fine figure. A Kansas newspaper used “couldn’t cut the mustard” by 1889, and O. Henry used it in 1907. The popular “cut the muster” story has no evidence.
