Why do we say “Busy as a bee”?

Working hard and nonstop.

The story

Bees have stood for tireless work for a very long time. Geoffrey Chaucer used the comparison in The Canterbury Tales, written between about 1386 and 1400, with the words “for ay as busy as bees,” “ay” meaning always. It’s the first recorded use, and the simile has been buzzing through English ever since, more than six hundred years.
