Why do we say “Needle in a haystack”?

Something nearly impossible to find.

The story

The older saying was a needle in a “bottle” of hay, and a bottle was simply a bundle of hay. Hunting for one tiny needle in all that loose straw was a picture of hopeless searching. Back in 1532, Sir Thomas More wrote of going to look for a needle in a meadow. The haystack version came later and stuck.
